Tourist tax via an option
Example: you charge € 2.50 tourist tax per person per night. A customer books with 4 people for 3 nights.
Note
i-Reserve has no separate «tourist tax» feature. You handle this with an option (extra) on a product in day mode. The per-night multiplication only works in day mode.
What does the customer see?
The tourist tax appears as a separate row: € 2.50 × 4 people × 3 nights = € 30.00 (on top of the stay price).

Step — Create the option
Go to Views → Options and create a new option:

The quantity the customer chooses (for example the number of people) is multiplied by the number of nights and the fixed amount: amount × people × nights.
